Try pairing the goat cheddar with a subtle herbaceous white such as a Sauvignon Blanc. Sauvignon Blanc is a light-bodied, dry and bright white wine that has perfect citrus and grassy notes that complement the cheese. These wines have a lively green character beneath the fruit aromas, making them a perfect pairing for the grassy flavours of goat cheese specifically.

There is also a stony quality to the wines that match with the chalky minerality of the cheese. The finest examples of Sauvignon Blanc come from Sancerre, in the Loire Valley in France, but there are very fresh vibrant examples coming from Marlborough, New Zealand.
