Ingredients
French Toast:
- 8 slices brioche bread, 2-inches thick
- ¼ cup (60mL) unsalted butter
- 8 eggs
- ½ cup (125mL) chives
Bechamel:
- 5.3 oz (150g) Black River - Chipotle Seasoned Cheddar Cheese Log, chopped
- ¼ cup (60mL) unsalted butter
- 1 tbsp (15mL) all purpose flour
- 2 cloves garlic, minced
- 2 cups (500mL) heavy cream
Directions
- Preheat oven to 425°F (220°C).
- In a large sauce pot over medium heat, melt ¼ cup (60 mL) of butter. Stir in flour and garlic, cook for 2 minutes. Whisk in cream and cheese, cook for 5 minutes until cheese has fully melted and sauce coats the back of a spoon
- Toast and butter bread slices and place onto a large non-stick baking tray that has edges. Use your thumb or the back of a spoon to press a small indent into the centre of each piece of bread. Spoon ¾ of the cheese sauce over bread slices. Crack one egg into the indent of each bread slice. Spoon remaining sauce over eggs. Bake for 15-20 minutes or until eggs are cooked to desired doneness.
- Serve warm and garnish with fresh chives.
