Savoury French Toast Baked with Chipotle Bechamel

Thick sliced fresh brioche bread drizzled with a Black River Chipotle cheese sauce topped with a fresh farm egg is a great way to add some spice to your brunch. Keep the spice going and serve a creaser cocktail alongside your savoury toast.

Ingredients

French Toast:

  • 8 slices brioche bread, 2-inches thick
  • ¼ cup (60mL) unsalted butter
  • 8 eggs
  • ½ cup (125mL) chives

Bechamel:

Directions

  1. Preheat oven to 425°F (220°C).
  2. In a large sauce pot over medium heat, melt ¼ cup (60 mL) of butter. Stir in flour and garlic, cook for 2 minutes. Whisk in cream and cheese, cook for 5 minutes until cheese has fully melted and sauce coats the back of a spoon
  3. Toast and butter bread slices and place onto a large non-stick baking tray that has edges. Use your thumb or the back of a spoon to press a small indent into the centre of each piece of bread. Spoon ¾ of the cheese sauce over bread slices. Crack one egg into the indent of each bread slice. Spoon remaining sauce over eggs. Bake for 15-20 minutes or until eggs are cooked to desired doneness.
  4. Serve warm and garnish with fresh chives.
