A British Stout is any cheddar's best friend, with its rich notes of roasted barley, coffee and chocolate. These dark beers vary widely among countries that brew this style, so you may need to experiment to find your ideal.
But generally, an inviting toasted/coffee nose is followed by complex malt character, caramel/toffee, and maybe a hint of smoke, which all blend nicely with similar qualities in the cheese. Creamy, salty with a nutty bite and a firm texture, this cheese is just developing the complex aged qualities that create delicious flavours when tasted along with these beers.
