OUR NATURALLY AGED CHEDDARS

 

At Black River Cheese Company Ltd, we take great pride is using no artificial preservatives. Our aging process dates back to how cheese was aged more than a century ago with no artificial preservatives. As the cheese undergoes the aging process, it becomes sharper and sharper. The texture of the aged cheddars tends to become somewhat crumbly in nature, which is perfectly normal.

All our aged cheddars are still made the same way with salt as our only natural preservative. Naturally aged in a thermostatically controlled environment and monitored for quality, our aged cheddars are recognized for their very distinctive and smooth taste with just the right amount of "tang" per year. This is exactly what you can expect from our fine artisan aged cheddar, along with slight lactose crystallization in the 5 and 6 year cheddars.

1 YEAR AGED CHEDDAR

Like a fine wine, BLACK RIVER CHEESE COMPANY'S Naturally Aged 1 Year Cheddar is a delightful first step towards their highly recognized aged cheddars for which they have garnered a strong following amongst cheese connoisseurs.

With just enough "zest" to tantalize your taste buds, this hard cheese has a subtle earthy flavour with a slightly nutty aftertaste. More full-flavoured than its "younger" siblings, it has a bit more texture and is not as smooth.

 

It's a great cheddar choice if you like to cook or bake with cheese. In fact, our 1 Year Aged Cheddar makes for wonderful cheese breads or cheese rolls as it flavour seems to become enhanced whenever baked or used in cheese sauces for any main course meal or vegetable. 2 YEAR AGED CHEDDAR

 

Practicing a century old cheese making craft, BLACK RIVER CHEESE'S Naturally Aged 2 Year Cheddaris quite simply "aged to perfection" and is usually the first choice when when it comes to an aged cheddar as it suits most palates.

 

The taste and quality of this aged cheddar is subtle a step up from the milder, fresh cheeses. It offers a light tanginess compared to the longer aged cheddars; however it suits those who like a touch more zest to their cheddar without any sour aftertaste.

As with all premium aged cheddars, our 2 Year Aged Cheddar texture is slightly crumbly but is somewhat smoother and easy to cut than other aged cheddars. Its mild sharpness makes it a perfect ingredient for any cheese dish such as traditional macaroni and cheese and other pasta meals or melted in a cheeseburger or over grated over hot peach pie.

There are advantages to growing older at least for BLACK RIVER CHEESE COMPANY LTD.'s Naturally Aged 3 Year Cheddar. With a somewhat stronger taste than our 1 and 2 year aged, this is one aged cheddar that will win over cheese eaters, who have become increasingly adventurous about the variety of products they are prepared to try.

 

 

It has as a delightful, flinty texture with a sweet yet piquant flavour that gives it a slightly "edgy" tingle to one's salivary glands.

When it comes to entertaining, this delicious cheddar like its "younger" aged siblings pairs well with a variety of wines including Cabernet, Chardonnay, Merlot, Pinot Gris, Pinot Noir, Sauvignon Blanc, Syrah and Zinfandels as well as fresh fruit. There is a variety of great recipes which can be enhanced whenever you add our 3 Year Aged Cheddar.
